8 DECEMBER - FATBIKES AND FERMENTATION WORKSHOP
(GROUP WILL NEED TO SPLIT INTO 2 GROUPS OF 10 PAX)
FATBIKES - 9AM AND 1PM. 10 PAX PER SESSION.
With ocean views and sand dunes as far as the eye can see we set off from the top of the picturesque Walker Bay Nature Reserve on a 6km adveture through winding dune fields. Our guide Dave Caravias shreds these dunes on his fatbike every day and he’ll show us how to tame the sand on these fun machines. Fatbike tires are designed to carve through sand with minimal effort while providing the stability needed to stay upright and safe on high rise dunes. The tour is excellent for anyone that can ride a bike and loves nature. Whether you are a pro-rider or just a novice you will love the experience as it is completely unique and fun from start to finish. For the those no so confident there are easy routes around the Dunes and for the adrenaline lover come and experience the steep faces of the Dunes and learn how to ride down them with ease. Dave show you how to Slalom Ski down the Dunes and tackle the steep faces safely with ease.

TABBY’S FERMENTATION WORKSHOP - 9AM AND 1PM AT STANFORD VALLEY
Local legends and self-sufficient living experts Tabby and Alex have been living off the Stanford land for the past 20 years. Specializing in all aspects of self-sufficient living, from natural soap-making to rabbit husbandry but their real passion lies in fermentation. Tabby will lead us in the Re-discovey in the alchemy of fermenting food as a way of preservation and promoting excellent gut health. In this workshop we will look at 2-3 different ways to preserve food and make a super probiotic boost to your day to day eating and pantry (2-3 hours)
- Sweet fermented soda for a healthy pick-me up
- Salt fermentation with seasonal veggies
- Cultured butter (if vegans, we can do a fermented cashew cheese)

6 DECEMBER - FYNBOS, ROCK ART + RIVER CRUISE
MORNING HIKE
Following a light breakfast we’ll team up with botanist and hiking guide Dr Chris Whitehouse. Discover more about the unique flora of this part of the world on a specialist botanical hike. Your guide, Chris, is a world expert on the plants of South Africa and also has extensive knowledge of the natural history of the area. He loves to share his knowledge of the plants, and stories of their uses and interactions with animals. The Fynbos floral kingdom is the most diverse collection of vegetation in the world and it only exists in this little corner of Africa making it one of the most protected landscapes. There is no need for you to know anything about the Fynbos or have any botanical knowledge in advance – whether you are starting with no knowledge about plants or are already a keen botanist you will be able to learn more at your own level. At it’s peak you’ll be able to enter a small cave with displays of Khoi-San Rockart from up to 3000 years ago (the original inhabitants of SA).
Easy graded hike of 2.5 - 3 hours

You’ll return to Stanford Valley Guest Farm for Lunch and to freshen up before departing again for the boat cruise.
AFTERNOON
Set out on the Lady Stanford, an exclusive luxury boat cruise down the Klein River from Stanford Village towards the Hermanus Estuary and back. Indulge in the scenic beauty of the surrounding mountain ranges, while our experienced guides point out a wide variety of birdlife, especially the feathered variety! The Lady Stanford is an experience for any nature lover who wants to be completely immersed in a pristine environment. The boat is fully equipped with relevant birding books and checklists, binoculars, blankets and even an eco-friendly toilet. Guests are welcome to bring their own snacks and drinks on board. Ice and glasses will be provided.
